Morning set up of stalls

Most of the stock which is sold in the stalls is stored away in nearby flats used as warehouses. The heavily laden trolleys are wheeled into the market by hired helpers who have earlier been assembling the stall frames. These helpers are often not local Chinese people but immigrants or members of minority groups.

Because of the limited space in the stalls each stall holder keeps their stock in these nearby locations, therefore if they run out of something during the day or perhaps you are interested in buying more than is on display they can often restock or get extras very quickly. Of course this is only something they will do for a larger customer as being small business men with often only one or at most two people on a stall they can't abandon their business to go away and get things.
